Ingredients

  • 1 cup all-purpose flour
  • 2 Tbsp maple sugar
  • pinch of salt
  • 5 eggs
  • 2 cups milk
  • 2 Tbsp melted butter
  • 1 tsp vanilla extract
  • canola oil for cooking
  • maple syrup for serving

Method

  1. In a large bowl, combine the flour, maple sugar and salt. Add the eggs. Gradually whisk in the milk.
  2. Add the melted butter and vanilla. Mix until smooth
  3. Heat a medium-sized non-stick frying pan or crepe maker over medium heat. When the pan is hot, brush it with oil.
  4. For each pancake, pour about 1/4 cup of batter into the center of the pan. Rotate the pan to spread the batter all over. Cook for about 1 minute or until the rim releases easily and the bottom is lightly browned. Flip the crepe using a spatula. Continue cooking for 30 seconds and remove from the pan. Place the crepes on a plate, cover with aluminum foil and keep warm until serving.
  5. Serve with maple syrup.
