Ingredients
- 2 oz white Acerum
- 1.5 oz Maple, Pear, and Vanilla Cordial (Recipe in house *)
- 1/2 teaspoon Absinthe
- 1 star anise to garnish
RECIPE IN HOUSE: MAPLE, PEAR, AND VANILLA CORDIAL
- 1 pear
- Fine maple sugar (in the same quantity as the weight of the pear)
- 3/4 inch vanilla pod
- Maple water (in the same quantity as the weight of the pear)
- 1 teaspoon citric acid
- 1/2 teaspoon malic acid
Method
- Add all ingredients to a shaker filled with ice.
- Shake vigorously for 10 seconds.
- Double strain into a cocktail glass.
- Garnish with star anise.
House Recipe: Pear Vanilla Maple Cordial
- Dice the pear and weigh it.
- Place the pear in a glass container and add the same weight of maple sugar.
- Add the vanilla bean, cut lengthwise.
- Close the container and let it rest at room temperature for 2 hours.
- Refrigerate the container for 24 hours.
- Add the maple water and mix until the sugar is completely dissolved.
- Strain and measure the amount of syrup made. For each 100ml of syrup, add another 100ml of maple water as well as citric and maltic acide
- Mix to dissolve the acids and bottle it. The cordial keep in the refrigerator for 1 month.
